Sunday-Banana Bread

Our day started as early as 630am[not that early haha]. Adam woke me for milk, as usual. After that, everybody had a quick shower except for Adam and off we went to Thompson Mall. We always prefer to go to FairPrice to stock up our pantry staples. 

I bought so many fruits and vegetables. Haha I'm still sticking my b*tt in my diet routine. No rice, less sugar and eat side dishes only. I ate fruits for just now lunch, and had to hold my saliva from dropping while preparing hubby's quick lunch [a yummy chicken[left over form chicken rice]  mayo sandwich]. And for dinner, I'm planning to re-heat my black pepper beef. 
So today munchy-munchy is banana bread. This recipe is such an ABC recipe and so yummeh, so busy moms with kids are highly recommended to keep this recipe in your pocket. In case you have ripe bananas and other basic baking ingredients, this recipe can turn that bananas into a warm buttery banana bread. Preparing time is 20 minutes, baking will take about 1 hour, and it will took just seconds to finish it off. 
Okay, all you need is;

 "1/3 cup of butter [ i used SCS butter], 4 ripe bananas [mashed up], 1 cup of brown sugar, 1 egg, beaten, 1 tablespoon of vanila extract, 1 teaspoon of baking soda, a pinch of salt and 11/2 cups of flour."

"Preheat your oven to 180C. Grease a 30x23-cm bread tin. Pour the mashed bananas into big mixing bowl. Mix in butter, sugar, egg, & vanilla extract. Add the baking soda and salt and mix in the flour. Pour into the prepared tin and bake for 1 hour. Remove and cool"

Hubby loved it and asked me to baked it often hehe. I ate a slice only and I love it too.. So this recipe is totally a keeper!

Friday- Pear and Ginger Muffin

I made this for our brunch today. I love the bread-y texture so much and the sweet-spongy mixture between oats, raisin, and diced pear is so unique and tasty. My kitchen smells so nice with the nutmeg-cinnamon-ginger fragrant from the baked muffins. I can keep munching of those muffins if I wasn't on diet.. hehe I'll definitely baked this often..and perhaps try to replace those pears with other fruits. 
The recipe is originated from Sophie Dhal's Voluptuous Delights book. But I'd adjust the ingredients with what I have in my pantry. So below is the recipe excerpt from the book;

"Ingredients [Serves 12]:
Sunflower oil
2 teaspoon of baking powder
1 teaspoon of baking soda
1teaspoon of ground ginger
1 teaspoon of ground cinnamon
3/4 teaspoon grated nutmeg { I used ground nutmeg}
11/4 cup spelt flour {I used all-purpose}
11/2 cup of rolled oat 
1 cup of pear puree { I blend 2 pears and make puree}
4 egg whites-lightly beaten
1/2 cup of natural yogurt
3/4 cup honey { I omit}
1 firm pear, diced
3/4 cup raisin"

"Preheat oven to 190C. Grease a 12-hole muffin tray with sunflower oil. Sift the baking powder, baking poweder, ginger, cinnamon and nutmeg into large mixing bowl. Stir in the flour and the oats. Make a well in the midldle of the dry ingredients and add in the wet ingredietns, the diced pear and the raisins. Stir very gentle until all the dry ingredients are folded into the batter. Pour the batter into the tray filling each cup two-third full. 
Put in the oven and ake for about 25-30 min, until the tops of the muffins are brown."

 As far for my diet, it's still on track. I ate half banana and half portion of muffin for my brunch. and slurped on plain water instead of coffee.

Thursday- Hainanese Chicken Rice

We have this for dinner. I always love Banquet's Chicken Rice. For my taste buds, it's the best chicken rice I've ever tasted so far! The tender and juicy chickens with fragrant-ginger and garlicky rice. Yummeh! 

{but I believed the downfall of this dish is the chicken broth/soup, it's just a plain soup with no cilantro, fried shallots, spring onions, etc..so plain..and that's why some ppl prefer "Malay-version" chicken rice}

I've been trying to 'copy' the same taste for months, and always ended up with 'almost-near' taste.I believed the main ingredient for the rice is still missing.. They must be using some kind of ghee/butter to make the rice so so fragrant and so so yummy.. hehe I tried to add butter {all brand from SCS, Buttercup, Lurpak} previously, but maybe I should replace it with ghee. Hmm.. {BTW, QBB Ghee is halal again! :D}

Nevertheless, will try to make this chicken rice again and again. 
Okay, from now on, apart from posting some 'what-I-eat' today, I will put some update on my diet also. The diet resolution is simple, according to to Dr. Ping, just avoid rice, eat side dishes only, and avoid sugar! Sounds simple kan, and up until this hour, I still can stick my nose to this new resolution. I don't know how tomorrow gonna serves me..Will I break the rules?

Sunday Durian Mousse Cake

I saw this cake at Bakericious Blog last week and quickly added it my 'cake-to-do' wishlist. Since there still 2 boxes of durian left from last weekend baking project [read: Durian Cream Puffs], I decided to turn those durians into cake. :)

I simply bought a ready-made chiffon cake to make my job easier hehe and did the durian mousse myself. You can get the recipe from Bakericious Blog

Sunday Durian Cream Puffs


Ciao bella! I made this for my Mom-in-law for her birthday. [other people would bring cake instead of puff..aiyok!] and I really 'kembang' when everybody especially hubby loves the puffs to bit! :") :") hahaha

Saturday Soto Ayam




It Saturday morning, I woke up at 8 and had a terrible craving for Soto Ayam. Quickly had my shower and off to the wet market to buy all the ingredients. It took me a while to slowly pick and grab all the portions from the market since I never prepare Soto from scratch ;p

But, me being me, even though I had a list with me, I forgot to buy the main component, the Adabi nasi Himpit. [not all from scratch he he ]My saviour a.k.a my hubby had to go here and there, from shop to shop to find THE nasik himpit. or else we would have to settle on bihun. So x jadik la soto ayam.. ;p jadik bihun soto nanti..but he managed to come home with 2 packet of it.. Great!

Even though it sounds so easy to prepare it, believe me when I say it is soooo tedious to make Soto Ayam from scratch. I normally buy the Soto "rempah" and threw everything inside the pot and it would taste more like a chicken soup rather than a real Soto Ayam. As I said, it was tedious. I had to prepare the soup, the begedil, lining down the "rencah" aka carik ayam, frying the soo hon, slicing down everything, oh etc. I was rushing since we had a Raya date at my sis in law house at 1++. I was sweating all the time trying to cope with the timeline. Oh, baju x iron lagi, Adam x makan lagi, soto x siap lagi. tsk.

Finally, after 21/2 hr in the kitchen, my soto is served on the table. Phew! 

And to my amaze, Alhamdulilah, Adam ate a bowl of it. Being known for his western appetite, it surprised me very much. and I'm Glad my hubby love it, in fact he added another bowl of it. It was yummeh to our own liking. As I always said it, this recipe is a keeper!!

Tart Nenas Bunga with cream-cheesed dough



Tart Nenas has become a must-served Raya cookie on the table for most families in Malaysia including mine. And most people would claim their mom's, or auntie's, grannie's or any other Jane's the best. 

So do I. 

My mom's recipe is my father's favorite since it melts in your mouth and the best part is the pineapple filling itself. The sweet-sour tasted jam was indescribable.Yummehs! For me, my mom is sooo good in making jam, you named it, from pineapple jam up to rambutan jam. And again it all were yummeh!

So, this year, I decided to bake my own tart nenas. My early plan was to follow my mom's recipe, kunun resepi warisan lah ;p, but I was tempted to try K. Fida recipe in MyResepi. She added cream cheese into the dough, and I presumed it would enrich the dough with "lemak2" flavor. And it did! So this recipe is totally a keeper. ;)

For the shape, frankly typing, I adore the old-shaped tart, round and love shapes, more that the 'gulong" one. Non other reasons except the shape reminisces me back into my childhood memories where we used to make tart nenas in that shape. Nolstalgic!

But on the other hand, I saw this flowery shape on Google and "sepantas kilat" did the tart with this shape. And it was a tedious job ever. It took me about 4 hours, bersekang mata, shaping up the petals and leaves. But the result was amazing. Definitely will make my tart with the Flower shape ever. :)

Will update more on this. Need to work some magic in the kitchen..

Kek Kukus Buah-Buahan Cik Mat Gebu

.I've been eying this cake from CMG blog for ages. But did'nt have enough guts to try it out because of the word 'kukus' (steam). 

My previous experiences with kukusan were bad.. Steam pau pun boleh melekit2, x rupe pau.. he he 

But today, with full of baking spirit, off me to the nearest runcit to prepare the ingredients. Golden Churn in 474g tin can cost me SGD7.30. Ouch! Mahal.. klu tak jadik kek aku, mmg lah.. 

What's make me change my mind ( to kukus this cake) is that, all recipes, especially ones that involved baking, in Mat Gebu blog were indeed tested and idiotproof!!

[but this is steaming, tu baking ;p] 

Nevertheless, my nearly 12-hrs work was paid off!!!

Ketuk Ketuk Ramadan 2010 bersama Sheila Rusly

The title belongs to a cooking show hosted by Sheila Rusly. It's not an ordinary show, like, normal cooking show,bahan2 nya adalah bla2.. cara2 nya ialah.. bla bla bla.. (i've mentioned ordinary just now and redundant it with normal ;p), it is a cooking show plus 'terjah' elements with it. 

I really like this cooking show. 

NO. 

I'm crazy about it and addicted to watch it everyday. A daily dose of Ketuk2 Ramadan is a must for me. It's the only time I got to watch TV and relax <--not true 

 Not 100% relax actually.T_T

 It always happened that I  has/had to feed Adam during that peak- hour time. Juggling my eyes between Adam food, make sure it placed properly in his mouth, not his shirt/cheeks.hair, and the big screen. Juling mate juggling camni ;p

And sometimes I ended up 'listening' to the show.. Listening tau, bukan watching.. hehe Seriously cam zaman dulu kala dgr radio..  Adam meal times were (and still are) the most challenging moment for me.  

Luckily, in SG, we have two (2) slots for Ketuk Ketuk Ramadan. RTM is airing this year, 2010 season, at 12.31 pm, everyday right before afternoon Nasional News. And Suria is showing the previous season at 630pm everyday.Perfect! while waiting to break the sawm, i get to watch the show and get some ideas for tomorrow menus.. hehe eventho previous season, tapelah, janji KKR gak..

Why I love the show? Simply bcoz of her, the host.. Sheila Rusly, with her pok pek mouth haha She is always in energetic mode, and know how to handle her show guests well ;p I also admire her feminine confidence and her cookings, although I never taste one yet haha.. obviously ;p Jemputlah saya Cik Sheila.. leh merasa air tgn Cik Sheila.. ;p hehe 

I'm not into local artist [means I'm not a hardcore fan of any artist, juz follow up gitu2 je] but it was interesting to see "artist" bersilat in the kitchen. Ada yg control ayu, cam ELLe M*zl*n.. citt poorah.. ;p  Just be yourself la, tgk K sheila tu, tak control pun.. Ade yg selamba je.. Ade yg tergopoh gapah.. Ade yg terer masak.. ;p And they all have to name their food. Believe it or not, Norman Hakim named his pudding, pudding ala Memey..alahai.. duuh.. 

Ok I had to stop this now since I dont want to turn this blog into a gossip blog ;p and jupe lagi esok hari dalam.....

Marble Cheese Brownies

Due to many demands for the recipe, hehe, so here I am, putting up the recipe on my own blog.. This is my first kitchen entry in this blog.

Kopi pes sebijik dari CMG, berikut adalah cara2 nya ;p

BAHAN BROWNIES :-)
250 g mentega
1 cawan serbuk koko
1/2 cawan susu cair
1 1/2 cawan gula halus
3 biji telur gred B
1 1/2 cawan tepung gandum*
1 camca teh baking powder*
1 camca teh soda bicarbonate*(*digaul rata dan diayak)
1 camca teh esen vanilla
BAHAN CHEESE :-)
250 g cream cheese
1 cawan gula halus (guna 3/4 cawan)
1 biji telur gred B
CARA MEMBUATNYA :-

  1. Lenser tin berukuran (10 x 10 x 2) inci dengan mentega, alas dengan kertas minyak, biar kertas minyak terlebih dari tin. Lenser juga kertas minyak dengan mentega. Panaskan oven pada suhu 175C.
  2. UNTUK BROWNIES :- Cairkan mentega (gunakan kaedah double-boiler) hingga cair, masukka serbuk koko dan kacau hingga rata. Kacau gula halus + telur dengan whisk hingga sebati. Masukkan ke dalam bancuhan koko + butter dan gaul rata. Masukkan susu cair, kacau rata. Tambah tepung sedikit demi sedikit sambil diadun hingga sekata. Tuang esen vanilla, gaul rata dan asingkan adunan ini lebih kurang 1 1/2 camca besar untuk dibuat corak atas cheese. Tuang selebihnya dalam loyang tadi, bakar 25 - 30 minit atau hingga brownies masak.
  3. UNTUK CHEESE TOPPING :- Putar cream cheese dan gula hingga sebati, masukkan telur dan putar lagi hingga berkrim. Tuang atas brownies tadi dan ratakan. Isikan adunan brownies yang diasingkan tadi dalam piping beg, dan buat beberapa garisan lurus, kemudian lorekkan untuk mendapat hasil seperti dalam gambar. Sambung membakar selama 15 - 20 minit lagi atau hingga masak, biarkan betul2 sejuk, baru dipotong untuk dihidangkan...
