Banana Bread and sigh....

I love having a warm slice of banana bread for breakfast or tea. Toast it lightly, top with a dollop of butter and nom nom nom, with coffee. Heaven! Seriously, it takes almost no effort to make a good banana cake (or eating them!). The utmost importance in making one lies on the banana itself, whether or not they are perfectly ripe for baking. To make it more easier than it already is, I made this quick bread with my bread machine :P
I found this banana bread recipe from my bread maker recipe booklet. It's a little different than other banana bread recipes I've ever made: an addition of golden syrup and Cre'me Fraiche. I'd to substitute it (read: Creme Fraiche) with sour cream. Both items makes the bread/cake incredibly tender and I always love a darker slice of banana bread.
I'm actually not in a mood for baking. We're quite busy recceing Adam new kindergarten, and baking (the real one, not this) is the last thing on my mind these few days. It's been almost a week and it really drained me, inside out.

Most kindergarten we went are either fully booked, has a long waiting list, too far from our place or way too expensive. FYI, kindergarten/childcare is a very serious business here. Most of the parents start to enroll their kids almost literally after they popped out! C.R.A.Z.Y!! I have made another appointment on Monday with one kindy that we think suit 'our needs' the best. Let's just hope that would be the last kindy appointment I've to make.

Sigh........

As for now, my half eaten banana bread is looking so lonely on my counter top. I better go and entertain myself them now.

Happy Sunday to you! :)
