Pandan Waffles

I usually eat breakfast alone. When both men are no longer in the house. Work and school, of course. While I don't mind having Nasi Lemak for breakfast everyday, I'm rather partial to have those 'light stuffs' i.e. pancakes, crepe, french toast, etc once or twice a week. I'm always up for anything with maple syrup...

Anyway, today, I made waffles for breakfast. I was contemplating in making either pandan (screwpine) or blueberry waffles. Combining both in a batter sounds yucky tho. Pandan is best paired with chocolate chips, while blueberries are match made in heaven with bananas (for me). So, I chose to make pandan waffle, and kept the blueberry for dessert. What else do you think is best paired with pandan/blueberry? 

These waffles are absolutely gorgeous, both in texture and taste wise. The sweet pandan aromas are very inviting. I ate it plain, with peanut butter and kaya (as advised by Amanda of Crumb and Cookies) and of course, maple syrup, as I wanted to experiment which has the best flavor combo. The peanut butter turned out to be the best. *confetti* Ehem, I only ate one piece of waffle, which I cut into 4. :P

I do recommend this recipe. You might want to double the recipe tho.
